Antioxidants in Animal Tissue.

Abstract
Tentative methods for the determination of antioxidants in biological materials, based on the reaction with the stable free radical [alpha], [alpha]-diphenyl-[beta]-picrylhydrazyl, are described. The methods are used in a study on the occurrence of antioxidants in mammalian blood and livers. Three groups of substances giving the reaction are present Fat-soluble antioxidants, water-soluble antioxidants, and proteins containing, e.g., thiol-groups. The amounts of the 3 groups of substances are determined, and the results discussed in relation to data compiled from the literature on the occurrence of such substances.
