Milk Lipase. I. The Lipolytic Activity of Separator Slime

Abstract
The lipolytic activity of separator slime was determined on tributyrin in the presence of sodium barbital buffer at 37.5[degree]C for 1 hour. Separator slime was found to be a more concentrated source of lipase than cream or skim milk. Homogenization and centrifuga-tion of separator slime resulted in an aqueous preparation which could be concentrated under high vacuum without significant loss of activity. Lyophilization of the slime produced a product high in lipase activity which retained its lipolytic properties for long periods when stored at 0[degree]C. Blood constituents did not seem to contribute to the high lipolytic activity of separator slime.
