A Modified Diphenylamine Procedure for Fructose or Inulin Determination

Abstract
A modification of Harrison''s diphenylamine method for fructose or inulin detn. is described, heating being carried out at 75[degree] for 60 min. With this procedure the ratio of fructose to glucose color production is 64, as compared with a ratio of 8 at 100[degree]C for 30 min. Inulin hydrolysis is complete, the standard error of the method is less than 1%, the color is light stable and the low color production by glucose permits the omission of fermentation except in the presence of unusual glucose fluctuations.
