Growth of the Potato Tuber.

Abstract
Growth of the potato tuber from initiation to a 200 g tuber was studied. The cell number increased 500 times while cell volume increased only 10 times. The relative rate of daily increase of starch, soluble-nitrogen, ash, dry-weight, and nonreducing sugars was greater than volume of cells, green weight, wall material, and protein. This relationship predicts that factors associated with maturing tissue, such as starch, soluble-nitrogen, ash, dry-weight, and nonreducing sugars would be predominant in a large tuber.
