Preparation and characterization of the isomaltodextrins

Abstract
A dextran synthesized by Leuconostoc mesenteroides (strain NRRLB-512) was partly hydrolyzed with acid; the products were fractionated on charcoal-Celite. Glucose was the only monosaccharide product; the di- to hexa-saccharide fractions each contained a single component. The oligo-saccharides were characterized as the lower members of the isomalto-dextrin series and new crystalline derivatives of the tri- and tetra-saccharides were prepared. Some observations on the copper-reducing powers of glucose oligosaccharides are recorded.Keywords
