EFFECTS OF STORAGE ON ALCOHOLIC EXTRACTS OF PLANT TISSUES. AMINO ACID CHANGES

Abstract

Extracts of spinach leaves lost amino acid N when stored either in darkness or in light. The deaminization did not proceed at a uniform rate. It was most rapid in samples high in nitrates. In all samples the loss at the 6th week was 25% or more.
