Abstract
The sample holder of the diffuse reflectance attachment of the Beckman spectrophotometer was modified to provide a means of measuring the spectral composition of milk. Conversion of the spectral data into I.C.I. and Munsell notation indicated that no serious error was introduced by fluorescent compounds. A convenient index for routine estimation of the darkening in color of evaporated milk was found by noting the changes in reflectance of light at 520 mu wave length.
