The nature of the Aeromonas fermentation

Abstract
A. hydrophila causes a butylene glycol fermentation of carbohydrate. The end products from glucose are 2,3-butylene glycol, ethanol, acetic and lactic acids, CO2 and H2 with traces of acetoin and succinic acid; the 2,3-butylene glycol is a mixture of the l- and meso-forms. The products of xylose fermentation are similar to those of glucose. Pyruvic acid is fermented mainly to lactic and acetic acids, CO2 and H2. Approx. 3 mol. pyruvic are oxidized to acetic acid for every one reduced to lactic acid.
