Abstract
The influence of varying concentrations of (NH4)2 SO4, NaCl and Na2CO3 was studied. Neutral salts have a dual effect. In low concentration they displace the p H for minimum Kuni. In higher concentration they depress the velocity of denaturation. The author concludes that these results support the theory that heat denaturation is a catalysed hydrolysis.This publication has 6 references indexed in Scilit:
