Studies of Lipase Action. III. Lipase Action in the Milk of Individual Cows

Abstract
A study was made of lipolysis in the milk of 61 individual cows. A great deal of variation was found in the rates of lipolysis in different samples, and in the response of different samples to activation by warming and cooling. There was no apparent correlation between the rates of lipolysis and the stage of lactation, the stage of gestation, or the milk production of the individual cows.In some of these samples, the formaldehyde-tolerant lipase predominated; in others, the formaldehyde-sensitive enzyme was more important. Most of the samples contained both enzymes.
