The heat coagulation of caseinogen

Abstract
A study has been made of the rate of liberation of P and N and of the rate of coagulation when solutions of Ca caseinogenate are heated to 90-115[degree]C. For each 10[degree] rise in temp. the reaction velocity of dephosphorylation and coagulation increased 3-fold. The results confirm the previous conclusion that dephosphorylation and coagulation are related reactions. No liberation of P was found after storing evaporated milk at ordinary temps. for periods of 6-9 mo.
