Nutritive Value of High and Low Calcium-Carrying Wheat

Abstract
High- and low-calcium containing wheats were fed to rats, the wheat furnishing 90 per cent of the diet. The percentage of bone ash, of calcium, and of phosphorus in the extracted bones, and the serum calcium and phosphorus were higher in all animals fed Kota (high-calcium) wheat than in those fed Turkey (low-calcium) wheat. The advisability of using high-calcium wheats for both human and animal diets is indicated. The question is raised as to what proportion of the calcium carried by the wheat occurs in the flour and whether it is feasible to breed high calcium-carrying wheats.
