Abstract
Summary The presence of a new enzyme, β-glucosidase, was shown in significant amount in all 11 honeys tested. Optimal conditions for activity over a 20-min period, using 0·2-Mp-nitrophenyl-β-D-glucopyranoside (β-PNPG) as a substrate, were pH 4·2 and temperature 60°C.
