DETERMINATION OF ANTHOCYANOGENS II. FURTHER STUDIES ON THE ANALYSIS OF BEER

Abstract
Examination of the methods proposed for the estimation of the anthocyanogens in beer has revealed that the adsorbents employed, Nyion 66 and Agent AT, contain impurities which reduce the yield of anthocyanidin pigments by oxidizing the anthocyanogens. Procedures are given for purifying the adsorbents, but maximum values are also obtained by carrying out the adsorption with the commercial adsorbents in presence of a reducing agent such as ascorbic acid. Evidence is presented to show that Agent AT is a more selective adsorbent for beer anthocyanogens than Nyion, and the colorimetric method based on its use has greater sensitivity and accuracy.
