Evidence for shear-induced biaxiality in Lα lecithins close to solid surfaces

Abstract
Optical studies of shear-oriented water-lecithin multilayers were performed in the Lα phase of egg and di-palmitoyl lecithins. The samples appeared biaxial with the plane of the two principal optic axes parallel to the direction of shear. Since Lα phases are known to be uniaxial in the bulk, we attribute this biaxiality to a surface effect. This is consistent with preliminary quantitative measurements of the biaxiality and of the birefringence. The penetration length is estimated to be ≃ 1 μm
