Abstract
It is biologically plausible that diets high in vegetable and fruit intake protect against cancer. Many vegetables and fruits are high in candidate protective substances, such as fiber, antioxidant vitamins and minerals, and other potentially anticarcinogenic compounds including dithiolthiones, isothiocyanates, indole-3-carbinol, flavonols, and lignans, to name a few.
