Abstract
The cell-free fermentations reported by earlier workers have been due to presence of living cells. Certain substances have a marked stimulating effect on yeast. Wildier''s bios, a good example, is identical with cozymase. Differences between "cell-free" and "vital" fermentation are explained on the assumption that living cells in dried yeast and press juice are in a state of great activation and consequently behave in a special manner. Much of our present information on zymase rests on faulty methods of experimentation.
