A basic knowledge of bacteriology is essential for all those who work with food. Where are pathogenic bacteria commonly found? How may they be transmitted to food? What conditions favour the multiplication of the pathogens? How can food be protected against contamination? This is the information required to reduce the food poisoning outbreaks which reached a record number in 1976.
