Purification and Characterization of Milk Lipase. I. Purification

Abstract
The purified milk lipase gave a typical protein UV absorption spectrum with maximum absorption at 277 m[mu] and minimum at 251 m[mu], with A277/A251 ratio being 2.34. The enzyme contained 49.63% C, 7.51% H2, 14.33% N, 1.04% S, and 0.26% P. The purified enzyme is distinctly different in its characteristics from other known milk proteins and enzymes. It probably exists as a physically absorbed unit on casein particles.
