The orientation at the oil/water interface of esters and their digestion by pancreatin

Abstract

Analogies are drawn from observations on the adsorption of OH" ions on the ester molecules orientated at the air/water interface to the adsorption of the OH" ions at the oil/water interface. These results are used to explain the specific action of the lipo-clastic ferment in pancreatin on its digestion by aliphatic esters.
