Abstract
Linoleic acid hydroperoxide formed by soybean lipoxygenase was metabolized by the same enzyme in the presence of guaiacol. The products of this reaction included trihydroxyoctadecenoic acids, hydroperoxydihydroxyoctadecenoic acids, hydroxyepoxyoctadecenoic acids, dihydroxyoctadecenoic acids, hydroxyoctadecadienoic acids, and oxooctadecadienoic acids.Keywords
