Ueber den Einfluß des Kochens auf den Nährwert des Hühnereies

Abstract
Young growing rats when fed a diet consisting solely of raw eggs, or eggs boiled 3 1/2 min. or 10 min. show, in contrast to those of Friedberger, that raw eggs give no optimum growth for rats but are harmful. Soft and hard boiled eggs do not differ in their nutritive value. Ordinary cooking is not harmful to eggs.
