On the Occurrence of Trichinella spiralis in Pork Sausage Available in Iowa (1953-60)

Abstract
Studies were conducted during the 1953-60 period to determine the prevalence of T. spiralis larvae in commercial pork sausage available in Iowa. Trichinae were found in 1.0% of 8402 fresh bulk sausage samples, 2.4 % of 1432 fresh link samples and 0.2% of 861 processed link samples. This is a marked decrease from studies in 1944-1946 when the prevalence for bulk and non-processed link pork sausage was 12.4% and 11.7%, respectively. The decline in prevalence is related to garbage feeding regulations, better swine management, widespread use of home freezers and lockers, and decrease in home processing of meat.Keywords
