Note on the nutritive value of the nitrogenous substances contained in dried yeast (Torulopsis lipofera)

Abstract

Dried yeast (T. lipofera) as a source of N was inferior to whole wheat flour for the growth of rats. A diet containing 1/4 of the N as yeast and 3/4 as whole wheat flour gave slightly better growth response than whole wheat flour alone. This is at- tributed to the presence of larger quantities of lysine in the yeast proteins.
