METHYLGUANIDINE CONTENT IN FOOD

Abstract
Fresh fish and beef, and dried or canned fish contained 0.2-0.9 ppm of the carcinogen methylguanidine, while ham, sausages, salami sausage and skim milk had no detectable amount (< 0.2 ppm). Bushi-rui contained 21-106 ppm of methylguanidine, and 2 brands of peptone, 22 and 70 ppm, respectively.
