Abstract
An enzyme which is specific for alkyl cysteine sulphoxides has been partially purified from onion. The enzyme appears to require pyridoxal phosphate as a cofactor, but shows no stimulation in activity by various metals. It shows a very low order of inhibition by various sulphydryl group reagents. Electrophoresis shows a single protein peak at 2 pH levels.Keywords
