Cleavage of Alkyl Cysteine Sulphoxides by an Enzyme in Onion (Allium cepa).

Abstract
An enzyme which is specific for alkyl cysteine sulphoxides has been partially purified from onion. The enzyme appears to require pyridoxal phosphate as a cofactor, but shows no stimulation in activity by various metals. It shows a very low order of inhibition by various sulphydryl group reagents. Electrophoresis shows a single protein peak at 2 pH levels.
