Abstract
Extracts of ungerminated barley catalyse the synthesis of oligosaccharides from cellobiose. The oligosaccharides have been isolated and characterized. They include gentiobiose, laminaribiose, gentiobiose, cellotriose and 62-0-glucosylcellobiose. The acceptor specificity of the barley enzymes and similar enzymes from other biological sources is discussed.Keywords
