Abstract
There was a 50% destruction of vitamin B2 when autoclaved at 120[degree] C for 1 hour at pH 8.7-7.2, irrespective of whether it was contained in a watery yeast extract, marmite solution or an aqueous liver extract. The rate of destruction increased rapidly with increasing alkalinity and prolongation of the time of heating.This publication has 8 references indexed in Scilit:
