Culture filtrates of B. ribis and P. italicum were assayed for pectin methyl esterase (PME), depolymerase (DP), and polygalacturanase (PG). Both B. ribis and P. italicum showed PG and PME activity but no DP activity. Polygalacturanase activity was greatest for both organisms when the substrate was sodium polypectate.
