Relation of Iodine to the Goitrogenic Properties of Soybeans

Abstract
The thyroid enlargement obtained with rations containing 10 and 30% of raw or heated soybeans was effectively prevented with 1 to 2 µg of iodine per rat per day. The iodine requirement of rats was slightly greater on soybean-containing rations than on the basal ration employed. The reduced thyroid enlargement resulting from heat treatment indicates that the goitrogenic property of soybeans is partially heat labile. Since small amounts of iodine effectively correct the mild goitrogenic property of soybeans, no harmful effects should result from the use of soybeans in practical rations.
