Abstract
Vit. C was prepared from beet pulp and other pectic substances by a newly developed process which involved treatment of the pectic substance with a pectinase; separation of the resulting galacturonic acid as a difficultly soluble salt; reduction with hydrogen to a salt of 1-galactonic acid; conversion to 1-galactono-lactone; oxidation to 2-keto-l-galac-tonic acid; and lactonization and enolization to ascorbic acid (vit. C). Electronic interpretations are presented for the processes involved.
