Physicochemical properties of human lactalbumin

Abstract
The separation of lactalbumin from the whey of human milk and its physicochemical properties are described. The mobility of lactalbumin was [long dash]4[center dot]7 x 10[center dot]5 cm. 2v-1 sec.-1 at pH 8[center dot]5, I 0[center dot]1, and the electrophoresis patterns were heterogeneous at pH 3[center dot]5, but homogeneous at pH 3[center dot]0 and 5[center dot]5. A single symmetrical sedimentation boundary of lactalbumin was obtained. The sedimentation coefficient was 1[center dot]7s and the molecular weight 23 000.Keywords
