Abstract
The capillary behavior of egg-lecithin was studied and the surface tension-p H curves plotted for both aqueous and aqueous-alcoholic solutions at 25[degree]. The isoelectric point of lecithin was thus determined to be 2.6. The presence of NaCl or CaCl2 causes the isoelectric point to move slightly to the acid side.This publication has 3 references indexed in Scilit:
