Abstract
To assess the efficiency of the silica-gel extraction method used to recover monoglycerides from milk, purified monobutyrin and monostearin were added to milk at levels of 0.1 and 2.0 m[image]/100 g of fat. Average per cent recoveries were monobutyrin o.1 m[image]-95.7, 2.0 m[image]-96.6; monostearin 0.1 m[image]-100.8, 2.0 m[image]-97.5.
