Abstract
Safe food is a prerequisite for good nutrition and health. This idea has driven scientific investigations and public policies that, in turn, led to major improvements in health and longevity. Changes in food production and consumption practices, population demographics, and health status and understanding the long-term health consequences of food-borne illnesses will impel future policy reforms.Keywords
