Abstract
Alkali ion absorption by bakers'' yeast is associated with an exchange process largely mediated by H+ which can either arise metabolically or be supplied by acid washing. The rate of cation entry into yeast cells is in agreement with a diffusion-limited passive exchange process.Keywords
