Abstract
An approximate titration equation is developed for the reaction between fibrous proteins and acids, in which account is taken of the valency and intrinsic affinities of the acid anions, and of the limited number of adsorption sites available for anions. The transition from soluble to fibrous proteins is traced in order to demonstrate that the main difference between the titration curves of the two types of protein arises from the difference in potential developed during the adsorption of protons.Keywords
