The amount of hypochlorite destroyed by proteins is not proportional to amount of protein present. The experiments point to 2 factors in the reaction the possibility of the NaClO acting either as an oxidizing or as a chlorinating agent; and the variable stability of the chloroamino-derivatives formed by the latter reaction. By taking mixtures of 2 amino-acids, one of which has a stable, and the other an unstable, chloro-amino-derivative {e.g., glycine and cystine), it is possible to reproduce the protein-type of curve.
