Abstract
The stereochemistry of the enzymatic cleavage of saccharose and raffinose by invertase from Candida util is, β-D-fructofuranosi-de fructohydrolase (EC 3.2.1.26), was investigated? The experiments show that both substrates are cleaved under retention of configuration: fructose will be released as β-fructofuranose; the other products of the hydrolysis - glucose from saccharose and melibiose from raffinose - have the α-configuration. β-Fructopyranose and β-glucose/ β-melibiose will be formed by mutarotation.This publication has 13 references indexed in Scilit:
