The adsorption of paraffin-chain salts to proteins. Part I. Some factors influencing the formation and separation of complexes between gelatin and dodecyl sodium sulphate

Abstract

Adsorption is continuous until a unitnolecular layer of dodecyl sodium phosphate (D.D.S.) ions attached by their polar groups to the basic nitrogen atoms of the protein is formed. Further addition of D.S.S. results in the formation of a reverse layer with polar groups outermost, and eventually peptization occurs.
