The occurrence of a phytin-splitting enzyme in the intestines of albino rats

Abstract
An enzyme capable of hydrolyzing phytin was found in the intestines of albino rats. Its optimum activity is at about pH 7 [center dot] 8 and its action is accelerated by Mg++ ions. A partial hydrolysis of phytin probably takes place in the intestines of these rats.
