Changes in the Amino-acids in the Proteins of the Hen's Egg during Development

Abstract
Analyses were made on the fresh egg, at the 15th day of incubation and on the newly hatched chick. No definite changes occurred in the amide and humin N. There was a distinct increase in the total diamino N and an increase in the arginine N in both experiments, while the total monoamino N definitely decreased. Cystine N increased while bromine absorption figures decreased as the cystine N increased, this change probably indicating a decrease in tyrosine content.This publication has 4 references indexed in Scilit:
