Protein content of gastric juice: Part I A study of the validity of the biuret reaction in determining protein concentration after peptic digestion and acid hydrolysis of protein

Abstract
Peptic digestion and acid hydrolysis of albumin at 37[degree]C for 24 hrs. do not influence the color reaction produced by the biuret reaction. The hydrolysis is limited, and the polypeptides formed produce the same degree of color reaction as does albumin.
