On the reaction between metaphosphoric acid and egg albumin

Abstract
When egg albumin is ppted. with metaphosphoric acid, the amt. of the ppt. as well as its P content depends on the metaphosphoric acid conc. The limiting, constant P content of the ppts. is equivalent to 27 positively charged groups per egg-albumin molecule. The ppts. are soluble in salt solns. and unchanged P-free protein can be regained by crystallization from ammonium sulphate soln.
