CHANGES IN THE YEAST POPULATION ON QUEBEC APPLES DURING RIPENING

Abstract
The numbers and species of yeasts occurring on Quebec apples were determined at two-week intervals during the ripening season. The numbers of yeasts decreased during August but increased in October. Ten species were isolated of which Candida malicola and Rhodotorula gluiinis var. rubescens were the most predominant. There was not any evidence to show that rainfall was correlated with the numbers of yeasts on apples.
