Abstract
A comprehensive scheme using ion exchange and partition chromatography is described for the determination of non‐volatile organic acids of pome fruits. The method is used to investigate changes occurring in the acids of the peel and pulp of mature Bramley's Seedling apples during storage at 15°. These changes involve not only the aliphatic acids malic, citramalic and citric, but also the alicyclic acids quinic and shikimic.Keywords
