The body fats of the pig

Abstract
Specimens of outer back and perinephric fats from the same pig were studied after resolution into several fractions of varying degrees of solubility in acetone. The approx. molar % of the outer back fat and the perinephric fat in palmitodi-"olein" was 46-53 and 35-40 respectively; in oleo-palmito-stearin, 34-27 and 39-34; in oleo-dipalmitin, 5 and 9; in stearodi-olein, 0-7 and 0-5; in tri-oleins, 10-3 and 8-3; fully saturated glycerides, 5 and 9. The proportions of the respective groups of tri-"olein," palmitodi-"olein," "oleo"-palmitostearin, and of the fully saturated glycerides in each pig fat, together with other results strongly support the hypothesis that stearo-glycerides in these animal depot fats have resulted from saturation of preformed oleo-glycerides. Also, the observations disclose a gradual increase in the proportions of dipalmito-glycerides as the general degree of saturation of the depot fats becomes more pronounced.
