Abstract
Production of dairy products in large "super" plants requires the latest state- of-the-art equipment. In addition, meth- ods for operation of equipment must be based on current dairy technology. Principal factors that influence quality and profitability of cheese manufacture in large plants are: 1) milk quality, 2) milk standardization, 3) choice of starter programs, 4) moulding, pressing, and cooling of cheese, 5) choice of milk clotting enzymes, 6) variation of methods of manufacture, and 7) intensity of management personnel. Discussion of factors and guidelines established for operation of large cheese plants are reviewed.
