Some Evidence Supporting the Specificity of Milk Lipases for the Primary Hydroxyl Positions of Milk Glycerides

Abstract
Equal mixtures of raw and homogenized milks were incubated at 37[degree]C for 2 hr. Analyses were made for acid degree values, and 1- and 2-monoglycerides (MGs) at the moment of mixing and at 20-minute intervals. The results show that milk lipases specifically hydrolyze the primary positions of the glycerides since the relative 2-MG concentration produced averaged 82.3%.
