DER EINFLUSS DER GESCHLECHTSHORMONE AUF DIE MUSKULATUR

Abstract
In the skeletal muscle of poultry, large quantities of estrogens produce swelling of the muscular fibers, granular decay, dissolution of fibers and splits of the sarcolemma. Connective tissue is swollen, loosened and edematous. The meat of cattle shows a qualitative and probably also a quantitative variation of hyaluronic acid content with sex by turbidimetric measurement. It was concluded that the variation of the ground substance of the connective tissue is dependent on the sex.
